Ingredients 

Main Ingredients

  • 2 tablespoon Vegetable oil
  • 1 large Eggplant cut into cubes
  • 1 cup Coconut milk
  • 2 tablespoon Red curry paste
  • 1 tablespoon Fish sauce
  • 1 tablespoon Soy sauce
  • 1 teaspoon Sugar
  • 1 cup Basil leaves fresh

Instructions 

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the red curry paste and cook for 1-2 minutes until fragrant.
  3. Add the eggplant and stir to coat with the curry paste.
  4. Pour in the coconut milk, fish sauce, soy sauce, and sugar. Stir well.
  5. Simmer for 20-25 minutes until the eggplant is tender.
  6. Stir in the fresh basil leaves just before serving.
