Ingredients 

Main Ingredients

  • 2 tablespoon Vegetable Oil
  • 1 cup Green Curry Paste
  • 400 ml Coconut Milk
  • 500 g Chicken Breast, sliced
  • 1 cup Thai Eggplants, quartered
  • 1 cup Bamboo Shoots, sliced
  • 1 tablespoon Fish Sauce
  • 1 teaspoon Sugar
  • 1 cup Thai Basil Leaves

Instructions 

  1. Heat the oil in a saucepan over medium heat.
  2. Add the green curry paste and cook for 2-3 minutes until fragrant.
  3. Pour in the coconut milk and bring to a simmer.
  4. Add the chicken and cook until it's no longer pink.
  5. Add the eggplants and bamboo shoots, and cook until tender.
  6. Season with fish sauce and sugar, then stir in the basil leaves.
  7. Serve hot with steamed rice.
