Authentic Thai Massaman Chicken Curry Recipe

- 2 tablespoon Vegetable Oil
- 1 lb Chicken Thighs, boneless and skinless, cut into chunks
- 1 cup Coconut Milk
- 2 tablespoon Massaman Curry Paste
- 2 cups Potatoes, peeled and cut into chunks
- 1 cup Onion, sliced
- 1 cup Chicken Broth
- 2 tablespoon Fish Sauce
- 1 tablespoon Tamarind Paste
- 1 tablespoon Brown Sugar
- 1 cup Roasted Peanuts
Heat the oil in a large pot over medium heat.
Add the curry paste and cook for 2 minutes.
Add the chicken and cook until browned.
Pour in the coconut milk and bring to a simmer.
Add the potatoes, onion, and chicken broth. Simmer for 20 minutes.
Stir in the fish sauce, tamarind paste, and brown sugar. Cook for another 10 minutes.
Garnish with roasted peanuts and serve hot.
