- 1 cup Chicken, shredded
- 2 cups Coconut milk
- 1 cup Chicken broth
- 1 tablespoon Fish sauce
- 1 tablespoon Lime juice
- 1 teaspoon Sugar
- 1 teaspoon Red curry paste
- 1 cup Mixed vegetables (carrots, bell peppers, etc.)
- 1 tablespoon Fresh cilantro, chopped
1. In a pot, combine coconut milk and chicken broth. Bring to a simmer.
2. Add shredded chicken, fish sauce, lime juice, sugar, and red curry paste. Stir well.
3. Add mixed vegetables and cook until tender.
4. Garnish with fresh cilantro before serving.
