Ingredients

  • 2 lbs oxtail
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, sliced
  • 2 stalks lemongrass, bruised
  • 4 cups beef broth
  • 2 cups water
  • 1 tablespoon fish sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups carrots, chopped
  • 2 cups daikon radish, chopped
  • 2 cups cabbage, chopped
  • 1 bunch cilantro, chopped for garnish

Instructions 

  1. 1. In a large pot, brown the oxtail pieces on all sides.
  2. 2. Add the chopped onion, minced garlic, sliced ginger, and bruised lemongrass. Cook until fragrant.
  3. 3. Pour in the beef broth and water. Bring to a boil, then reduce to a simmer.
  4. 4. Add fish sauce, salt, and black pepper. Simmer for about 1.5 hours or until the oxtail is tender.
  5. 5. Add the chopped carrots, daikon radish, and cabbage. Cook for another 20 minutes or until the vegetables are tender.
  6. 6. Garnish with chopped cilantro before serving.
