Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 medium Onion chopped
  • 4 cups Carrots peeled and chopped
  • 1 tablespoon Ginger grated
  • 2 cups Vegetable broth
  • 1 can Coconut milk
  • 2 tablespoon Red curry paste
  • 1 tablespoon Soy sauce
  • 1 tablespoon Lime juice freshly squeezed
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the carrots and ginger, and cook for another 5 minutes.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until carrots are tender, about 20 minutes.
  5. Remove from heat and let cool slightly. Blend the soup in batches until smooth.
  6. Return the soup to the pot. Stir in the coconut milk, red curry paste, soy sauce, and lime juice. Heat through.
  7. Season with salt and black pepper to taste. Serve hot.
