  • 4 eggs
  • 1 cup chili leftover or canned
  • ¼ cup shredded cheese
  • 1 tablespoon butter
  • Salt and pepper to taste

Instructions 

  1. Heat the chili in a pan over medium heat until warmed through.
  2. In another pan, melt the butter over medium heat.
  3. Crack the eggs into the pan and cook until the whites are set but the yolks are still runny, about 3-4 minutes.
  4. Season the eggs with salt and pepper.
  5. Divide the chili between two plates.
  6. Place two eggs on top of each plate of chili.
  7. Sprinkle shredded cheese over the top.
