Ingredients

  • 2 medium eggplants sliced
  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 1 cup panko breadcrumbs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ cup vegetable oil
  • ¼ cup chopped fresh cilantro
  • ¼ cup sweet chili sauce

Instructions 

  1. 1. Slice the eggplants and set aside.
  2. 2. In a bowl, mix flour, salt, pepper, garlic powder, and paprika.
  3. 3. Dip eggplant slices in flour mixture, then beaten eggs, and finally coat with panko breadcrumbs.
  4. 4. Heat oil in a frying pan over medium heat. Fry eggplant slices until golden brown and crispy.
  5. 5. Drain on paper towels. Serve with chopped cilantro and sweet chili sauce.
