Main Ingredients
- 2 medium eggplants sliced
- 1 cup all-purpose flour
- 2 eggs beaten
- 1 cup panko breadcrumbs
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ cup vegetable oil
- ¼ cup chopped fresh cilantro
- ¼ cup sweet chili sauce
1. Slice the eggplants and set aside.
2. In a bowl, mix flour, salt, pepper, garlic powder, and paprika.
3. Dip eggplant slices in flour mixture, then beaten eggs, and finally coat with panko breadcrumbs.
4. Heat oil in a frying pan over medium heat. Fry eggplant slices until golden brown and crispy.
5. Drain on paper towels. Serve with chopped cilantro and sweet chili sauce.
