Main Ingredients
- 200 g Glass Noodles
- 1 tablespoon Vegetable Oil
- 1 Onion sliced
- 2 cloves Garlic minced
- 1 tablespoon Curry Powder
- 400 ml Coconut Milk
- 1 tablespoon Soy Sauce
- 1 cup Vegetables mixed, chopped
- 1 Lime cut into wedges
- to taste Salt
- to taste Pepper
1. Cook the glass noodles according to package instructions. Drain and set aside.
2. Heat the vegetable oil in a frying pan over medium heat. Add the sliced onion and minced garlic, and sauté until fragrant.
3. Add the curry powder and stir for about 1 minute.
4. Pour in the coconut milk and soy sauce. Bring to a simmer.
5. Add the mixed vegetables and cook until tender.
6. Add the cooked glass noodles to the pan and toss to coat with the sauce. Season with salt and pepper to taste.
7. Serve hot, garnished with lime wedges.
