- 1 tablespoon vegetable oil
- 1 lb chicken breast, cut into bite-sized pieces
- 1 cup coconut milk
- 2 tablespoon red curry paste
- 1 cup chicken broth
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 cup bell peppers, sliced
- 1 cup carrots, sliced
- 1 cup basil leaves
Heat the oil in a large pot over medium heat.
Add the chicken and cook until no longer pink.
Stir in the curry paste and cook for another minute.
Add the coconut milk, chicken broth, fish sauce, and brown sugar. Bring to a simmer.
Add the bell peppers and carrots. Cook until tender.
Stir in the basil leaves and serve hot.
