Ingredients 

Main Ingredients

  • 2 tablespoon vegetable oil
  • 1 cup green curry paste
  • 1 lb chicken breast, sliced
  • 1 can coconut milk
  • 1 cup chicken broth
  • 2 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1 cup bamboo shoots, sliced
  • 1 cup bell peppers, sliced
  • 1 cup fresh basil leaves

Instructions 

  1. Heat the oil in a large pan over medium heat.
  2. Add the green curry paste and cook for 1-2 minutes until fragrant.
  3. Add the sliced chicken breast and cook until no longer pink.
  4. Pour in the coconut milk and chicken broth, bring to a simmer.
  5. Add the fish sauce and sugar, stir well.
  6. Add the bamboo shoots and bell peppers, cook for another 5-7 minutes until vegetables are tender.
  7. Stir in the fresh basil leaves just before serving.
