Ingredients

  • 2 tablespoon Green curry paste
  • 1 can Coconut milk
  • 1 cup Chicken broth
  • 2 cups Vegetables (bell peppers, zucchini, etc.) chopped
  • 1 lb Chicken breast sliced
  • 1 tablespoon Fish sauce
  • 1 teaspoon Sugar
  • 1 handful Fresh basil chopped

Instructions 

  1. 1. Heat a large pot over medium heat. Add the green curry paste and cook for 1-2 minutes until fragrant.
  2. 2. Add the coconut milk and chicken broth to the pot. Stir to combine.
  3. 3. Add the chicken breast slices and cook for 5-7 minutes until the chicken is cooked through.
  4. 4. Add the chopped vegetables and cook for another 5-7 minutes until the vegetables are tender.
  5. 5. Stir in the fish sauce, sugar, and fresh basil. Cook for another 2 minutes.
  6. 6. Serve hot with steamed rice.
