  • 2 medium Eggplants cut into cubes
  • 1 lb Shrimp peeled and deveined
  • 2 tablespoon Olive Oil
  • 3 cloves Garlic minced
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste
  • 1 tablespoon Lemon Juice
  • ¼ cup Fresh Parsley chopped

Instructions

  3. Add eggplant cubes and cook until tender.
  4. Add shrimp and cook until pink and opaque.
  5. Season with salt, pepper, and lemon juice.
