Ingredients

  • 2 large Thai eggplants sliced
  • 2 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon chili flakes
  • 1 tablespoon lime juice freshly squeezed
  • 1 tablespoon fresh cilantro chopped

Instructions 

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix olive oil, soy sauce, garlic powder, and chili flakes.
  3. Brush the eggplant slices with the mixture on both sides.
  4. Grill the eggplant slices for about 5-7 minutes on each side, until tender and grill marks appear.
  5. Remove from grill and drizzle with lime juice and sprinkle with fresh cilantro.
