Ingredients 

Curry Paste

  • 2 tablespoon Green curry paste

Main Ingredients

  • 400 ml Coconut milk
  • 500 g Chicken breast, sliced
  • 1 cup Mixed vegetables (bell peppers, zucchini, etc.)
  • 2 tablespoon Fish sauce
  • 1 tablespoon Sugar
  • 1 cup Fresh basil leaves

Instructions 

  1. 1. Heat a large pot over medium heat. Add the green curry paste and cook for 1-2 minutes until fragrant.
  2. 2. Pour in the coconut milk and bring to a simmer.
  3. 3. Add the sliced chicken and cook for 5-7 minutes until the chicken is cooked through.
  4. 4. Add the mixed vegetables and cook for another 5 minutes until tender.
  5. 5. Stir in the fish sauce and sugar. Adjust seasoning to taste.
  6. 6. Remove from heat and stir in the fresh basil leaves. Serve hot with steamed rice.
