Ingredients 

Main Ingredients

  • 200 g Rice noodles soaked in warm water for 30 minutes
  • 2 tablespoon Tamarind paste
  • 3 tablespoon Fish sauce
  • 1 tablespoon Sugar
  • 2 tablespoon Vegetable oil
  • 2 Eggs beaten
  • 200 g Shrimp peeled and deveined
  • 1 cup Bean sprouts
  • ¼ cup Chopped peanuts
  • 2 Green onions chopped
  • 1 Lime cut into wedges

Instructions 

  1. 1. Soak the rice noodles in warm water for 30 minutes. Drain and set aside.
  2. 2. Mix tamarind paste, fish sauce, and sugar in a bowl. Set aside.
  3. 3. Heat oil in a wok over medium-high heat. Add beaten eggs and scramble until just set. Remove and set aside.
  4. 4. In the same wok, add shrimp and cook until pink. Remove and set aside.
  5. 5. Add soaked noodles to the wok. Pour in the tamarind mixture and toss to coat the noodles evenly.
  6. 6. Add cooked eggs, shrimp, bean sprouts, and green onions. Toss everything together until well combined.
  7. 7. Serve hot, garnished with chopped peanuts and lime wedges.
