Ingredients 

Main Ingredients

  • 2 cups Coconut Milk
  • 1 tablespoon Yellow Curry Paste
  • 1 cup Chicken Breast, sliced
  • 1 cup Potatoes, diced
  • 1 cup Carrots, sliced
  • 1 tablespoon Fish Sauce
  • 1 teaspoon Sugar
  • 1 cup Water

Instructions 

  1. 1. Heat the pot over medium heat and add the coconut milk.
  2. 2. Stir in the yellow curry paste and cook for 2-3 minutes.
  3. 3. Add the sliced chicken breast and cook until no longer pink.
  4. 4. Add the diced potatoes and sliced carrots, then pour in the water.
  5. 5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. 6. Stir in the fish sauce and sugar, then cook for another 5 minutes.
  7. 7. Serve hot with steamed rice.
