Ingredients 

Main Ingredients

  • 2 cups Chicken broth
  • 1 cup Coconut milk
  • 1 tablespoon Red curry paste
  • 1 lb Chicken breast, thinly sliced
  • 1 cup Mushrooms, sliced
  • 1 tablespoon Fish sauce
  • 1 tablespoon Lime juice
  • 1 teaspoon Ginger, minced
  • 2 cloves Garlic, minced
  • 1 cup Bell peppers, sliced
  • 1 tablespoon Olive oil
  • to taste Salt and pepper

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the minced garlic and ginger, and sauté until fragrant.
  3. 3. Add the red curry paste and cook for another minute.
  4. 4. Pour in the chicken broth and coconut milk, and bring to a simmer.
  5. 5. Add the chicken breast slices and cook until the chicken is fully cooked.
  6. 6. Add the mushrooms, bell peppers, fish sauce, and lime juice. Simmer for another 10 minutes.
  7. 7. Season with salt and pepper to taste. Serve hot.
