Ingredients 

Main Ingredients

  • 1 cup Red lentils
  • 1 can Coconut milk
  • 2 tablespoon Red curry paste
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Ginger grated
  • 2 cups Vegetable broth
  • 1 tablespoon Soy sauce
  • 1 tablespoon Lime juice
  • 1 cup Spinach fresh
  • to taste Salt
  • to taste Pepper

Instructions 

  1. 1. Rinse the lentils under cold water until the water runs clear.
  2. 2. In a large pot, heat a bit of oil over medium heat. Add the chopped onion and cook until translucent.
  3. 3. Add the minced garlic and grated ginger, cook for another minute.
  4. 4. Stir in the red curry paste and cook for another minute.
  5. 5. Add the rinsed lentils, coconut milk, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. 6. Add the soy sauce, lime juice, and fresh spinach. Stir until the spinach is wilted.
  7. 7. Season with salt and pepper to taste. Serve hot.
