Ingredients 

Main Ingredients

  • 200 g Rice noodles
  • 400 ml Coconut milk
  • 200 g Chicken breast, thinly sliced
  • 2 tablespoon Red curry paste
  • 1 tablespoon Fish sauce
  • 1 tablespoon Palm sugar
  • 1 Lime, cut into wedges
  • 2 tablespoon Peanuts, crushed
  • 2 tablespoon Vegetable oil

Instructions 

  1. 1. Soak the rice noodles in warm water for 20 minutes, then drain.
  2. 2. Heat the vegetable oil in a wok over medium heat. Add the red curry paste and stir-fry for 1-2 minutes.
  3. 3. Add the chicken slices and cook until they are no longer pink.
  4. 4. Pour in the coconut milk, fish sauce, and palm sugar. Stir well and bring to a simmer.
  5. 5. Add the soaked noodles and cook until they are tender and have absorbed the sauce.
  6. 6. Serve the noodles with lime wedges and crushed peanuts on top.
