Ingredients 

Main Ingredients

  • 2 cups Mushrooms, sliced
  • 1 cup Coconut Milk
  • 1 tablespoon Thai Red Curry Paste
  • 1 cup Vegetable Broth
  • 1 tablespoon Soy Sauce
  • 1 teaspoon Sugar
  • 1 tablespoon Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, minced
  • 1 Lime, juiced
  • 1 handful Fresh Cilantro, chopped

Instructions 

  1. 1. Heat oil in a large pot over medium heat.
  2. 2. Add chopped onion, garlic, and ginger. Sauté until fragrant.
  3. 3. Stir in Thai red curry paste and cook for another minute.
  4. 4. Add mushrooms and cook until they start to soften.
  5. 5. Pour in coconut milk and vegetable broth. Bring to a simmer.
  6. 6. Add soy sauce and sugar. Stir well.
  7. 7. Simmer for 10-15 minutes until mushrooms are tender.
  8. 8. Stir in lime juice and fresh cilantro before serving.
