Soup Base
- 8 cups beef broth
- 1 piece ginger sliced
- 1 piece onion quartered
- 3 pieces star anise
- 1 stick cinnamon
- 2 tablespoons fish sauce
- 1 tablespoon sugar
Noodles and Toppings
- 8 ounces rice noodles cooked
- ½ pound beef sirloin thinly sliced
- 1 cup bean sprouts
- 1 bunch fresh basil
- 1 bunch fresh cilantro
- 1 piece lime cut into wedges
- 2 pieces green chilies sliced
1. In a large pot, bring the beef broth to a boil.
2. Add ginger, onion, star anise, and cinnamon. Simmer for 30 minutes.
3. Strain the broth to remove solids. Return the broth to the pot.
4. Add fish sauce and sugar to the broth. Stir well.
5. Place cooked rice noodles in bowls. Top with raw beef slices.
6. Pour hot broth over the beef and noodles. The heat will cook the beef.
7. Garnish with bean sprouts, basil, cilantro, lime wedges, and green chilies.
