Ingredients 

Main Ingredients

  • 1 cup Pineapple chunks fresh or canned
  • 1 tablespoon Vegetable oil
  • 1 cup Coconut milk
  • 2 tablespoon Red curry paste
  • 1 cup Bell peppers, sliced red and green
  • 1 cup Chicken breast, sliced optional
  • 1 tablespoon Fish sauce
  • 1 teaspoon Sugar
  • 1 teaspoon Salt to taste
  • 1 cup Basil leaves fresh

Instructions 

  1. Heat oil in a saucepan over medium heat.
  2. Add red curry paste and stir for 1-2 minutes.
  3. Add chicken and cook until no longer pink.
  4. Pour in coconut milk and bring to a simmer.
  5. Add pineapple chunks, bell peppers, fish sauce, sugar, and salt. Cook for 10-15 minutes.
  6. Stir in basil leaves and cook for another 2 minutes.
  7. Serve hot with steamed rice.
