Main Ingredients
- 1 cup Pineapple chunks fresh or canned
- 1 tablespoon Vegetable oil
- 1 cup Coconut milk
- 2 tablespoon Red curry paste
- 1 cup Bell peppers, sliced red and green
- 1 cup Chicken breast, sliced optional
- 1 tablespoon Fish sauce
- 1 teaspoon Sugar
- 1 teaspoon Salt to taste
- 1 cup Basil leaves fresh
Heat oil in a saucepan over medium heat.
Add red curry paste and stir for 1-2 minutes.
Add chicken and cook until no longer pink.
Pour in coconut milk and bring to a simmer.
Add pineapple chunks, bell peppers, fish sauce, sugar, and salt. Cook for 10-15 minutes.
Stir in basil leaves and cook for another 2 minutes.
Serve hot with steamed rice.
