Ingredients 

Main Ingredients

  • 500 g Prawn shells and heads from fresh or frozen prawns
  • 1 large Onion chopped
  • 2 cloves Garlic crushed
  • 1 stick Celery chopped
  • 1 large Carrot chopped
  • 1 tablespoon Tomato paste
  • 1 liter Water
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black peppercorns
  • 2 pieces Bay leaves

Instructions 

  1. 1. Heat a large pot over medium heat and add a bit of oil.
  2. 2. Add prawn shells and heads, cook until they turn pink.
  3. 3. Add onion, garlic, celery, and carrot. Cook until vegetables soften.
  4. 4. Stir in tomato paste and cook for another minute.
  5. 5. Pour in water, add salt, peppercorns, and bay leaves. Bring to a boil.
  6. 6. Reduce heat and simmer for 45 minutes.
  7. 7. Strain the stock through a fine mesh strainer.
  8. 8. Let it cool, then store in the fridge or freezer.
