Main Ingredients
- 1 tablespoon Vegetable Oil
- 1 cup Onion, chopped
- 2 cloves Garlic, minced
- 1 tablespoon Ginger, minced
- 2 tablespoon Red Curry Paste
- 1 can Coconut Milk
- 2 cups Pumpkin, cubed
- 1 cup Vegetable Broth
- 1 tablespoon Fish Sauce
- 1 tablespoon Soy Sauce
- 1 tablespoon Brown Sugar
- 1 cup Bell Pepper, sliced
- 1 cup Spinach
- 1 tablespoon Lime Juice
- 1 handful Cilantro, chopped
Heat the vegetable oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and ginger, cook for another 2 minutes.
Stir in the red curry paste and cook for 1 minute.
Add the coconut milk, pumpkin, and vegetable broth. Bring to a simmer.
Add the fish sauce, soy sauce, and brown sugar. Stir well.
Simmer until the pumpkin is tender, about 15-20 minutes.
Add the bell pepper and spinach, cook for another 5 minutes.
Stir in the lime juice and chopped cilantro before serving.
