Ingredients 

Main Ingredients

  • 1 tablespoon Vegetable Oil
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 tablespoon Red Curry Paste
  • 1 can Coconut Milk
  • 2 cups Pumpkin, cubed
  • 1 cup Vegetable Broth
  • 1 tablespoon Fish Sauce
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Brown Sugar
  • 1 cup Bell Pepper, sliced
  • 1 cup Spinach
  • 1 tablespoon Lime Juice
  • 1 handful Cilantro, chopped

Instructions 

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and ginger, cook for another 2 minutes.
  4. Stir in the red curry paste and cook for 1 minute.
  5. Add the coconut milk, pumpkin, and vegetable broth. Bring to a simmer.
  6. Add the fish sauce, soy sauce, and brown sugar. Stir well.
  7. Simmer until the pumpkin is tender, about 15-20 minutes.
  8. Add the bell pepper and spinach, cook for another 5 minutes.
  9. Stir in the lime juice and chopped cilantro before serving.
