Red Thai Salmon Curry

Main Ingredients
- 4 fillets Salmon
- 2 tablespoon Red Thai Curry Paste
- 1 can Coconut Milk
- 1 cup Vegetable Broth
- 1 Red Bell Pepper, sliced
- 1 Onion, sliced
- 2 cloves Garlic, minced
- 1 tablespoon Fish Sauce
- 1 tablespoon Lime Juice
- 1 tablespoon Brown Sugar
- 1 handful Fresh Basil, chopped
1. Heat some oil in a large pan over medium heat.
2. Add the sliced onion and red bell pepper, cook until softened.
3. Add the minced garlic and cook for another minute.
4. Stir in the red Thai curry paste and cook for another minute.
5. Pour in the coconut milk and vegetable broth, bring to a simmer.
6. Add the salmon fillets and cook for about 10 minutes, until the salmon is cooked through.
7. Stir in the fish sauce, lime juice, and brown sugar.
8. Garnish with fresh basil before serving.
