Instructions
1. In a large pot, bring the chicken broth to a boil.
2. Add the lemongrass, kaffir lime leaves, and red curry paste. Simmer for 5 minutes.
3. Add the coconut milk, fish sauce, lime juice, and sugar. Stir well.
4. Add the mixed seafood and mushrooms. Cook until the seafood is done, about 5-7 minutes.
5. Add the sliced red chili and cook for another 2 minutes.
6. Remove from heat and garnish with fresh cilantro before serving.
