Ingredients 

Main Ingredients

  • 1 lb Mixed seafood (shrimp, squid, mussels)
  • 4 cups Chicken broth
  • 1 can Coconut milk
  • 2 tablespoon Red curry paste
  • 1 Lemongrass stalk (cut into 2-inch pieces)
  • 3 Kaffir lime leaves
  • 1 tablespoon Fish sauce
  • 1 tablespoon Lime juice
  • 1 teaspoon Sugar
  • 1 cup Mushrooms (sliced)
  • 1 Red chili (sliced)
  • 1 handful Fresh cilantro (chopped)

Instructions 

  1. 1. In a large pot, bring the chicken broth to a boil.
  2. 2. Add the lemongrass, kaffir lime leaves, and red curry paste. Simmer for 5 minutes.
  3. 3. Add the coconut milk, fish sauce, lime juice, and sugar. Stir well.
  4. 4. Add the mixed seafood and mushrooms. Cook until the seafood is done, about 5-7 minutes.
  5. 5. Add the sliced red chili and cook for another 2 minutes.
  6. 6. Remove from heat and garnish with fresh cilantro before serving.
