Spicy Thai Cucumber Salad

- 2 cups Cucumber, thinly sliced
- 1 cup Carrot, julienned
- ¼ cup Red onion, thinly sliced
- ¼ cup Fresh cilantro, chopped
- 1 tablespoon Soy sauce
- 1 tablespoon Rice vinegar
- 1 tablespoon Lime juice
- 1 teaspoon Sugar
- 1 teaspoon Red chili flakes
- 1 teaspoon Sesame oil
In a large mixing bowl, combine the cucumber, carrot, red onion, and cilantro.
In a small bowl, whisk together the soy sauce, rice vinegar, lime juice, sugar, red chili flakes, and sesame oil.
Pour the dressing over the vegetables and toss to coat evenly.
Let the salad sit for at least 10 minutes before serving to allow the flavors to meld.
