Spicy Thai Noodles With Shrimp

Main Ingredients
- 8 oz rice noodles
- 1 lb shrimp, peeled and deveined
- 2 tablespoon vegetable oil
- 3 cloves garlic, minced
- 1 cup bean sprouts
- 1 cup carrots, julienned
- ¼ cup green onions, chopped
- ¼ cup cilantro, chopped
- ¼ cup peanuts, crushed
- ¼ cup soy sauce
- 2 tablespoon fish sauce
- 2 tablespoon lime juice
- 1 tablespoon sugar
- 1 teaspoon red pepper flakes
1. Cook the rice noodles according to package instructions. Drain and set aside.
2. In a large skillet, heat the vegetable oil over medium-high heat. Add the garlic and cook until fragrant, about 1 minute.
3. Add the shrimp to the skillet and cook until pink and opaque, about 3-4 minutes. Remove shrimp from skillet and set aside.
4. In the same skillet, add the bean sprouts, carrots, and green onions. Cook for 2-3 minutes until vegetables are tender.
5. Add the cooked noodles, shrimp, soy sauce, fish sauce, lime juice, sugar, and red pepper flakes to the skillet. Toss to combine and heat through.
6. Remove from heat and garnish with cilantro and crushed peanuts. Serve immediately.
