Sweet Potato Thai Curry Recipe

- 2 cups Sweet Potatoes, diced
- 1 can Coconut Milk
- 1 tablespoon Red Curry Paste
- 1 cup Vegetable Broth
- 1 tablespoon Olive Oil
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 1 teaspoon Ginger, minced
- 1 tablespoon Soy Sauce
- 1 tablespoon Lime Juice
- to taste Salt
- to taste Black Pepper
- for garnish Fresh Cilantro, chopped
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and ginger, cook for another minute.
Stir in the red curry paste and cook for another minute.
Add the diced sweet potatoes, coconut milk, and vegetable broth. Bring to a boil.
Reduce heat and simmer until sweet potatoes are tender, about 20 minutes.
Stir in the soy sauce, lime juice, salt, and pepper to taste.
Garnish with fresh cilantro before serving.
