Ingredients

  • 2 apples cored and thinly sliced
  • 1 carrot julienned
  • 1 cucumber julienned
  • ¼ cup cilantro chopped
  • ¼ cup mint leaves chopped
  • ¼ cup peanuts crushed

Dressing

  • 2 tablespoon lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 clove garlic minced
  • 1 red chili sliced

Instructions 

  1. 1. In a large mixing bowl, combine the apples, carrot, cucumber, cilantro, and mint leaves.
  2. 2. In a small bowl, whisk together the lime juice, fish sauce, soy sauce, honey, garlic, and red chili to make the dressing.
  3. 3. Pour the dressing over the salad and toss to combine.
  4. 4. Sprinkle the crushed peanuts on top before serving.
