Thai Basil Mussels Recipe

Main Ingredients
- 2 lbs mussels cleaned and debearded
- 1 cup coconut milk
- 1 cup chicken broth
- 2 tablespoon red curry paste
- 1 lime juiced
- 1 cup fresh basil leaves chopped
- 2 cloves garlic minced
- 1 shallot sliced
- 1 tablespoon fish sauce
1. Heat the large pot over medium heat and add the red curry paste. Cook for 1-2 minutes until fragrant.
2. Add the garlic and shallot, and cook for another 2 minutes until softened.
3. Pour in the coconut milk and chicken broth, and bring to a simmer.
4. Add the mussels, cover the pot, and cook for 5-7 minutes until the mussels open up.
5. Stir in the lime juice, fish sauce, and fresh basil leaves. Serve immediately.
