Main Ingredients
- 1 lb beef stew meat
- 1 can coconut milk
- 2 tablespoon red curry paste
- 1 cup beef broth
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 1 cup carrots, sliced
- 1 cup bell peppers, sliced
- 1 tablespoon lime juice
- 1 cup fresh basil leaves
1. In a slow cooker, combine beef, coconut milk, red curry paste, beef broth, fish sauce, and brown sugar.
2. Add chopped onion, minced garlic, minced ginger, sliced carrots, and sliced bell peppers.
3. Stir everything together until well mixed.
4. Cover and cook on low for 8 hours or until beef is tender.
5. Stir in lime juice and fresh basil leaves before serving.
