Ingredients 

Main Ingredients

  • 2 lbs beef short ribs
  • 1 cup coconut milk
  • 2 tablespoon red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 cup beef broth
  • 1 lime (juice)
  • 2 cloves garlic (minced)
  • 1 inch ginger (minced)
  • 2 tablespoon vegetable oil

Instructions 

  1. Preheat your oven to 325°F (165°C).
  2. Heat oil in a Dutch oven over medium-high heat. Brown the short ribs on all sides.
  3. Remove the ribs and set aside. In the same pot, add garlic and ginger, sauté until fragrant.
  4. Add red curry paste, coconut milk, fish sauce, brown sugar, and beef broth. Stir well.
  5. Return the ribs to the pot, cover, and transfer to the oven. Cook for 3 hours or until the meat is tender.
  6. Remove from oven, add lime juice, and serve hot.
