Ingredients 

Main Ingredients

  • 1 kg Beef Chuck cut into cubes
  • 2 cups Beef Broth
  • 1 cup Coconut Milk
  • 2 tablespoon Red Curry Paste
  • 1 Onion chopped
  • 3 cloves Garlic minced
  • 1 Carrot sliced
  • 1 Potato diced
  • 2 tablespoon Fish Sauce
  • 1 tablespoon Brown Sugar
  • 1 tablespoon Lime Juice
  • 1 tablespoon Vegetable Oil
  • 1 handful Fresh Basil chopped

Instructions 

  1. Heat oil in a large pot over medium heat. Add the beef and cook until browned on all sides. Remove and set aside.
  2. In the same pot, add the onion and garlic. Cook until softened.
  3. Add the red curry paste and cook for another minute.
  4. Return the beef to the pot. Add the beef broth, coconut milk, fish sauce, and brown sugar. Bring to a boil.
  5. Reduce heat and simmer for 1.5 hours, or until the beef is tender.
  6. Add the carrots and potatoes. Cook until vegetables are tender.
  7. Stir in lime juice and basil before serving.
