Ingredients 

Main Ingredients

  • 4 cups Chicken broth
  • 1 cup Coconut milk
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, grated
  • 1 tablespoon Fish sauce
  • 1 tablespoon Lime juice
  • 1 teaspoon Sugar
  • 1 stalk Lemongrass, bruised
  • 2 leaves Kaffir lime leaves
  • 1 teaspoon Red curry paste
  • 1 handful Cilantro, chopped

Instructions 

  1. 1. In a pot, bring the chicken broth to a boil.
  2. 2. Add the garlic, ginger, lemongrass, and kaffir lime leaves. Simmer for 10 minutes.
  3. 3. Stir in the coconut milk, fish sauce, lime juice, sugar, and red curry paste. Simmer for another 10 minutes.
  4. 4. Remove from heat and discard the lemongrass and lime leaves.
  5. 5. Garnish with chopped cilantro before serving.
