Main Ingredients
- 1 cup cashews unsalted
- 2 tablespoon vegetable oil
- 1 onion chopped
- 2 cloves garlic minced
- 1 tablespoon ginger grated
- 1 cup coconut milk
- 2 tablespoon red curry paste
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 cup bell peppers sliced
- 1 cup broccoli florets
- 1 cup carrots sliced
- 1 tablespoon brown sugar
1. Heat oil in a large pan over medium heat. Add onions and cook until translucent.
2. Add garlic and ginger, cook for another minute.
3. Stir in red curry paste and cook for another minute.
4. Add coconut milk, soy sauce, and brown sugar. Bring to a simmer.
5. Add bell peppers, broccoli, and carrots. Cook until vegetables are tender.
6. Stir in cashews and lime juice. Cook for another 2-3 minutes.
7. Serve hot with rice.
