Ingredients 

Main Ingredients

  • 1 head Cauliflower cut into florets
  • 1 can Coconut Milk
  • 2 tablespoon Red Curry Paste
  • 1 tablespoon Soy Sauce
  • 1 cup Vegetable Broth
  • 1 tablespoon Olive Oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 inch Ginger grated
  • 1 tablespoon Lime Juice
  • to taste Salt
  • to taste Black Pepper
  • for garnish Fresh Cilantro chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent.
  2. Add minced garlic and grated ginger, cook for another minute.
  3. Stir in red curry paste and cook for 2 minutes.
  4. Add coconut milk, vegetable broth, soy sauce, and lime juice. Bring to a simmer.
  5. Add cauliflower florets and cook until tender, about 15-20 minutes.
  6. Season with salt and black pepper to taste.
  7. Garnish with chopped fresh cilantro before serving.
