Thai Cauliflower Curry
A delicious and easy-to-make Thai cauliflower curry.

Main Ingredients
- 1 head Cauliflower cut into florets
- 1 can Coconut Milk
- 2 tablespoon Red Curry Paste
- 1 tablespoon Soy Sauce
- 1 cup Vegetable Broth
- 1 tablespoon Olive Oil
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 1 inch Ginger grated
- 1 tablespoon Lime Juice
- to taste Salt
- to taste Black Pepper
- for garnish Fresh Cilantro chopped
Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent.
Add minced garlic and grated ginger, cook for another minute.
Stir in red curry paste and cook for 2 minutes.
Add coconut milk, vegetable broth, soy sauce, and lime juice. Bring to a simmer.
Add cauliflower florets and cook until tender, about 15-20 minutes.
Season with salt and black pepper to taste.
Garnish with chopped fresh cilantro before serving.
