Main Ingredients
- 1 whole chicken cut into pieces
- 2 stalks lemongrass cut into 2-inch pieces and smashed
- 4 slices galangal
- 4 cloves garlic smashed
- 1 large onion quartered
- 5 cups water
- 1 tablespoon fish sauce
- 1 teaspoon salt
- 1 handful cilantro for garnish
1. Place chicken pieces in a large pot.
2. Add lemongrass, galangal, garlic, onion, and water to the pot.
3. Bring to a boil, then reduce heat and simmer for 45 minutes.
4. Skim off any foam that forms on the surface.
5. Add fish sauce and salt. Adjust seasoning to taste.
6. Strain the broth and discard solids.
7. Garnish with cilantro before serving.
