Ingredients 

Main Ingredients

  • 1 lb chicken breast cut into pieces
  • 1 can coconut milk
  • 2 tablespoon red curry paste
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper sliced
  • 1 cup chicken broth
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • Fresh basil for garnish

Instructions 

  1. Place chicken, coconut milk, curry paste, onion, garlic, bell pepper, and chicken broth in the crock pot.
  2. Cook on low for 4 hours.
  3. Stir in fish sauce, brown sugar, and lime juice.
  4. Serve over rice and garnish with fresh basil.
