Thai Chicken Curry Crock Pot Recipe
A simple and delicious Thai chicken curry made in a crock pot.

Main Ingredients
- 1 lb chicken breast cut into pieces
- 1 can coconut milk
- 2 tablespoon red curry paste
- 1 onion chopped
- 2 cloves garlic minced
- 1 bell pepper sliced
- 1 cup chicken broth
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- Fresh basil for garnish
Place chicken, coconut milk, curry paste, onion, garlic, bell pepper, and chicken broth in the crock pot.
Cook on low for 4 hours.
Stir in fish sauce, brown sugar, and lime juice.
Serve over rice and garnish with fresh basil.
