Ingredients 

Main Ingredients

  • 1 tablespoon vegetable oil
  • 1 lb chicken breast, thinly sliced
  • 2 cups chicken broth
  • 1 can coconut milk
  • 2 tablespoon red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 cup carrots, julienned
  • 1 cup red bell pepper, thinly sliced
  • 1 cup snow peas
  • 8 oz rice noodles
  • 1 tablespoon lime juice
  • 1 handful fresh cilantro, chopped

Instructions 

  1. Heat the oil in a large pot over medium heat. Add the chicken and cook until browned.
  2. Add the curry paste and cook for another minute.
  3. Pour in the chicken broth and coconut milk. Bring to a simmer.
  4. Add the fish sauce, brown sugar, carrots, bell pepper, and snow peas. Cook until vegetables are tender.
  5. Meanwhile, cook the rice noodles according to package instructions. Drain and set aside.
  6. Stir in the lime juice and cilantro. Serve the soup over the cooked noodles.
