Thai Chicken Curry Recipe

Main Ingredients
- 1 lb Chicken Breast cut into bite-sized pieces
- 1 can Coconut Milk 13.5 oz
- 2 tablespoon Red Curry Paste
- 1 cup Chicken Broth
- 1 tablespoon Fish Sauce
- 1 tablespoon Brown Sugar
- 1 Red Bell Pepper sliced
- 1 Green Bell Pepper sliced
- 1 Onion sliced
- 2 cloves Garlic minced
- 1 tablespoon Ginger minced
- 1 tablespoon Lime Juice
- 1 handful Fresh Basil chopped
1. Heat a large pot over medium heat and add a bit of oil.
2. Add the garlic, ginger, and onion. Sauté until fragrant.
3. Add the chicken pieces and cook until they are no longer pink.
4. Stir in the red curry paste and cook for another minute.
5. Pour in the coconut milk and chicken broth. Bring to a simmer.
6. Add the bell peppers and cook until they are tender.
7. Stir in the fish sauce, brown sugar, and lime juice. Simmer for a few more minutes.
8. Remove from heat and stir in the fresh basil.
9. Serve hot with rice.
