Ingredients 

Main Ingredients

  • 1 lb Chicken breast, cut into bite-sized pieces
  • 2 cups Potatoes, diced
  • 1 cup Coconut milk
  • 2 tablespoon Red curry paste
  • 1 tablespoon Fish sauce
  • 1 tablespoon Brown sugar
  • 1 cup Chicken broth
  • 1 tablespoon Vegetable oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 inch Ginger, minced
  • 1 handful Fresh cilantro, chopped for garnish

Instructions 

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion, garlic, and ginger. Sauté until fragrant.
  3. Add the red curry paste and cook for another minute.
  4. Add the chicken pieces and cook until they are no longer pink.
  5. Pour in the coconut milk, chicken broth, fish sauce, and brown sugar. Stir well.
  6. Add the diced potatoes and bring the mixture to a boil.
  7. Reduce the heat and let it simmer for about 20 minutes, or until the potatoes are tender.
  8. Garnish with fresh cilantro before serving.
