Ingredients

  • 1 lb chicken breast thinly sliced
  • 8 oz fettuccine
  • 2 tablespoon olive oil
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 cup coconut milk
  • 2 tablespoon red curry paste
  • 2 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 2 cloves garlic minced
  • 1 teaspoon ginger minced
  • Fresh cilantro chopped, for garnish
  • Green onions sliced, for garnish

Instructions 

  1. Cook fettuccine according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chicken and cook until browned and cooked through. Remove chicken and set aside.
  3. In the same skillet, add bell peppers, garlic, and ginger. Sauté until peppers are tender.
  4. Stir in red curry paste, coconut milk, soy sauce, fish sauce, lime juice, and brown sugar. Bring to a simmer.
  5. Add cooked chicken and fettuccine to the skillet. Toss to coat everything in the sauce.
  6. Garnish with fresh cilantro and green onions before serving.
