Thai Chicken Fried Rice

Main Ingredients
- 2 cups Cooked Jasmine Rice preferably day-old
- 1 lb Chicken Breast cut into small pieces
- 2 tablespoon Vegetable Oil
- 3 cloves Garlic minced
- 1 Onion diced
- 2 tablespoon Soy Sauce
- 1 tablespoon Fish Sauce
- 1 teaspoon Sugar
- 2 Eggs beaten
- 1 cup Frozen Peas and Carrots
- 2 stalks Green Onions chopped
- 1 lime Lime cut into wedges for serving
Heat oil in a wok over medium-high heat. Add garlic and onion, stir-fry until fragrant.
Add chicken pieces, cook until no longer pink.
Push chicken to one side, pour beaten eggs on the other side. Scramble the eggs until cooked.
Add cooked rice, soy sauce, fish sauce, and sugar. Stir-fry everything together.
Add frozen peas and carrots, cook until heated through.
Stir in chopped green onions. Serve with lime wedges.
