Main Ingredients
- 1 lb Chicken breast, thinly sliced
- 2 cups Mushrooms, sliced
- 4 cups Chicken broth
- 1 can Coconut milk
- 2 tablespoon Fish sauce
- 1 tablespoon Lime juice
- 2 cloves Garlic, minced
- 1 tablespoon Ginger, minced
- 1 tablespoon Red curry paste
- 1 tablespoon Olive oil
- to taste Salt and pepper
1. Heat the olive oil in a pot over medium heat. Add the garlic and ginger, and sauté for 2 minutes.
2. Add the red curry paste and cook for another minute.
3. Pour in the chicken broth and bring to a boil.
4. Add the chicken slices and mushrooms. Cook for 10 minutes.
5. Stir in the coconut milk, fish sauce, and lime juice. Simmer for another 10 minutes.
6. Season with salt and pepper to taste. Serve hot.
