Ingredients 

Main Ingredients

  • 200 g Rice noodles cooked according to package instructions
  • 2 Chicken breasts cooked and shredded
  • 1 Red bell pepper thinly sliced
  • 1 Carrot julienned
  • ½ cup Cilantro chopped
  • ¼ cup Peanuts chopped

Dressing

  • ¼ cup Soy sauce
  • 2 tablespoon Lime juice freshly squeezed
  • 1 tablespoon Fish sauce
  • 1 tablespoon Honey
  • 1 tablespoon Sesame oil
  • 1 clove Garlic minced

Instructions 

  1. 1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. 2. In a large mixing bowl, combine the cooked noodles, shredded chicken, bell pepper, carrot, cilantro, and peanuts.
  3. 3. In a small bowl, whisk together the soy sauce, lime juice, fish sauce, honey, sesame oil, and minced garlic to make the dressing.
  4. 4. Pour the dressing over the salad and toss to combine.
  5. 5. Serve immediately or chill in the refrigerator for 30 minutes for a colder salad.
