1. Cook the rice noodles according to package instructions. Drain and set aside.
2. Heat the vegetable oil in a wok over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
3. In the same wok, add the garlic, carrots, and bell peppers. Stir-fry for 3-4 minutes until vegetables are tender.
4. Return the chicken to the wok. Add the cooked noodles, soy sauce, fish sauce, lime juice, and brown sugar. Toss to combine and heat through.
5. Remove from heat and stir in green onions, cilantro, and peanuts. Serve immediately.
