Ingredients 

Main Ingredients

  • 1 lb Chicken Breast sliced into thin strips
  • 8 oz Pasta spaghetti or linguine
  • 1 cup Carrots julienned
  • 1 cup Bean Sprouts
  • ¼ cup Green Onions chopped
  • ¼ cup Peanuts chopped
  • 1 tablespoon Sesame Oil
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Peanut Butter
  • 1 tablespoon Rice Vinegar
  • 1 tablespoon Lime Juice freshly squeezed
  • 1 teaspoon Garlic minced
  • 1 teaspoon Ginger minced
  • 1 teaspoon Red Pepper Flakes

Instructions 

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat sesame oil over medium heat. Add chicken strips and cook until no longer pink.
  3. Add garlic and ginger to the skillet and cook for another minute.
  4. In a mixing bowl, whisk together soy sauce, peanut butter, rice vinegar, lime juice, and red pepper flakes.
  5. Add the sauce to the skillet and stir to coat the chicken.
  6. Add cooked pasta, carrots, bean sprouts, and green onions to the skillet. Toss to combine.
  7. Serve hot, garnished with chopped peanuts.
