Thai Chicken Risotto

Main Ingredients
- 2 tablespoon Olive oil
- 1 cup Arborio rice
- 1 lb Chicken breast, diced
- 1 cup Coconut milk
- 2 cups Chicken broth
- 1 tablespoon Red curry paste
- 1 tablespoon Fish sauce
- 1 tablespoon Lime juice
- 1 cup Peas
- 1 handful Fresh cilantro, chopped
Heat olive oil in a large saucepan over medium heat.
Add diced chicken and cook until browned.
Add Arborio rice and cook, stirring, for 2 minutes.
Stir in red curry paste and cook for another minute.
Gradually add chicken broth, one cup at a time, stirring constantly until absorbed.
Once the broth is absorbed, add coconut milk and stir well.
Add peas and cook until tender.
Stir in fish sauce and lime juice.
Garnish with fresh cilantro and serve hot.
